Funfetti Cake Pops

Dipped in milk & white chocolate


Cake pops, what can we say? Decadent cake and rich buttercream come together in a delicious truffle like ball then dipped in a sweet chocolate shell! It's the perfect party size bite and fun for everybody, kids and adults alike. The best part, besides the amazing taste? You can make these from a box cake mix and frosting, or make from scratch!


INGREDIENTS

Cake

~ 1 & 2/3 cups all-purpose flour

~ 1/2 teaspoon baking powder

~ 1/4 teaspoon baking soda

~ 1/2 teaspoon salt

~ 1 stick unsalted butter, room temp

~ 1 cup granulated sugar

~ 1 large egg, room temperature

~ 2 teaspoons pure vanilla extract

~ 1 cup milk

~ Sprinkles of your choice


Frosting

~ 8 TBSP unsalted butter, room temp

~ 2 cups powdered sugar

~ 3 1/2 teaspoons heavy cream or milk

~ 1 teaspoon pure vanilla extract


Chocolate Coating

~ 1 - 2 bags of melting chocolate


INSTRUCTIONS

1) Line a 9x13” baking pan with parchment paper and preheat oven to 350. In one mixing bowl whisk together all dry ingredients and set aside.


2) In large bowl with a hand mixer or in a stand mixer, blend butter and sugar together until light in color and creamy in texture. Add in egg and vanilla and continue to beat on low to medium until combined.


3) With mixer on low, slowly combine dry ingredients, until just combined. Do not over mix.


4) Add in milk to batter and hand mix until just combined. Fold in your sprinkles, as many as you’d like! Pour batter into prepared cake pan and bake for 18-22 mins. When checking the cake, a toothpick should have a light crumb left on it when inserted. Let cake completely cool before mixing into frosting.


5) When ready combine butter and powdered sugar together with a hand or stand mixer. Add in heavy cream and vanilla and mix on high until creamy. Add in your cake in pieces and mix on low until combined. Cake should be slightly sticky and able to hold a shape.


6) Roll cake and frosting mix into 1 to 2 tablespoon size balls and place into freezer to set for 15 mins.


7) Remove cake balls from freezer and re-roll if they look a little misshaped.


8) Heat your melting chocolate according to package directions.


9) Dip cake into chocolate and place on tray with wax or parchment paper to set. If adding sprinkles, sprinkle immediately. Add a different color drizzle after initial chocolate dip has set.


10) Have fun with your decorations and colors! There is no right or wrong! Enjoy!!
