Chicken salad is always a great option for a quick & flavorful spring/summer lunch.
Tender bites of chicken pair perfectly with the light crunch from fresh celery, honeycrisp apples and chewy tart cherries. We used Greek yogurt in this recipe but you could absolutely go for a more traditional style and use mayo.

INGREDIENTS
~ 1 Rotisserie chicken
(meat deboned and chopped)
~ 2/3 - 3/4 cup greek yogurt*
~ 2 tablespoons shallot, diced
~ 1/2 cup celery, chopped
~ 1 cup (or more) dried cherries
~ 1 apple, diced
~ 1/3 cup sliced almonds
~ 2 teaspoons lime juice
~ 1/2 teaspoon garlic powder
~ 1/4 teaspoon paprika
~ 1/2 teaspoon celery salt
~ Salt and pepper to taste
INSTRUCTIONS
1) In a large bowl, combine the chicken, shallot, cherries, celery, apple, and almonds.
2) In another bowl, combine the yogurt, lime juice, garlic powder, paprika, celery salt and salt & pepper.
3) Toss both together well and refrigerate until chilled. Serve on choice of bread or
croissants with lettuce and tomato.
*Note: You can use mayo instead of yogurt. Adjust yogurt or mayo until you reach the
desired consistency. Same with spices, these are recommendations, adjust to your taste!
