with grilled chicken
This dish has all your classic bright spring flavors, with a fresh lemon and garlic sauce (no cream or flour!), crisp yet tender asparagus, fresh herbs, perfectly cooked pasta and grilled chicken. It’s light, healthy, satisfying and incredibly fast to make, so be sure to save this for a busy weekday night!

INGREDIENTS
~ 2 tablespoons unsalted butter
~ 1 small to medium shallot, diced
~ 3 cloves garlic, minced
~ 1/2 teaspoon sage
~ 1/2 teaspoon ground oregano
~ 1/2 teaspoon lemon pepper
~ Zest of 1 lemon
~ Juice from 1 1/2 lemons
~ 6-8 asparagus, cut into 1” pieces
~ 1/2 lb pasta (this will serve 2 people easy)
~ 2 Grilled Chicken Breasts
~ Fresh basil
~ Grated Parmesan cheese
INSTRUCTIONS
1) Cook pasta according to package directions. *Tip - make sure to use the recommended amount of salt in your pasta water. Usually 1 Tablespoon. Reserve 3/4 cup pasta water, then drain and set aside.
2) Meanwhile, in a large skillet over medium heat, melt butter, and add shallots, garlic and spices, simmer until fragrant. Add lemon zest, lemon juice and reserved pasta water, then add and cook asparagus until tender.
3) Once asparagus is cooked, turn off heat and mix in pasta until well coated. Serve with sliced grilled chicken, fresh basil and Parmesan. Salt and pepper to taste.
